According to Tobi there are three areas in Spain that lay claim to being the most famous for producing the best Paella – Valencia, Alicante and Castellon.
Our new EC1 head chef Fonsi – is from Valencia, his mother from Castellon and his father from Alicante! Ho!
Wednesdays are our paella day and Fonsi has been surprising us with his creativity combined with extensive traditional knowledge .
We all have a favorite – the classic rice paella with rabbit and chicken or the black squid ink rice with broad beans and squid or Fidegua (traditional pasta paella) with fresh tuna, salmon, plaice and squid.
Deliciosa! Riquisima! Espectacular!
Wednesdays are currently topping the best day of the week chart.

Unfortunately we haven’t taken any photos of our paella or Fonsi or anything really relevent to this blog…but we love this old Spanish money picture celebrating the Fiesta of the Fallas. Just before the spring equinox, everything negative left over from the cold days is burned in the blazing bonfires of the “fallas.” Fallas are gigantic papier-mâché figures that are burnt on the last day of the festival. The streets of Valencia are full of music, spring fever, fires and fireworks!
Maybe we can bring the festival to EC1…Do you think Islington council will mind?
